Media Converter has some really nice customizable settings.

Some video formats (such as 3gp) require specific sizes and you'll be forced to choose one of these should you decide to convert to a format like 3gp.
The Settings panel will let you change things like output video resolution, max file size, audio bitrate, video bitrate, and start and stop positions.
If you do not change any options, Media Converter will attempt to match the settings of the input file.
- Video resolution: this setting determines the final size of the video. If you choose a setting that is larger than the original, you will experience what appears to be a lower quality, larger video. This would be true of any video conversion program. Some can "hide" the lower quality better than others using video scaling techniques.
- Max File Size: be very careful about setting this. This is a good setting if you need to send a video over email, for example, and MUST limit the size. In most cases, it is best to let the file get as big as it needs to get, or quality will be sacrificed.
- Audio bitrate: 128 is CD-quality. Most people use this or 192. As you increase this value, you retain more of the original quality, but file size will grow. Again, Media Converter will attempt to match the original's setting if you leave this option alone.
- Video bitrate: the larger the value, the more quality you'll get out of your converted video (of course you cannot have better quality than the original. When in doubt, leave this option alone. However, if you need to have a smaller file size, tweaking this might yield acceptable results.
- Start and End positions: This is a great option if you need to trim your video and you know where to trim it.
